Is any cover available to me if I travel to a country outside of an NZ Government approved travel bubble?

You may continue to be covered for non-COVID-19 related losses, but this will always be subject to policy terms and conditions. For example failure to take precautions to avoid a claim after there was a warning not to travel to a destination in the media or by the Ministry of Foreign Affairs could impact your ability to claim.
